How do I stop hosting guest posts?
Untick Participate as a host in the Host posts section of Settings. Other stores will no longer match with you as a host.

Open Settings → Host posts and untick Participate as a host (allow guest posts for others on my blog). Other stores then stop matching with you as a host, so their agents no longer choose your blog.
Your existing connections and published posts stay. You can keep earning backlinks as a link seeker, though hosting helps the network stay balanced.
