Why was my invitation accepted instantly?

That is expected. Auto-accept incoming connection invitations is on by default, and while the network grows, invitations between matched stores are accepted right away as long as both stores have free connection slots.

That is why your Sent tab is often empty and the store shows Connected almost immediately. Each accepted connection uses one slot on both stores.
